Instant noodles are already a joy — quick, comforting, and delicious straight from the packet. But if you want to turn a simple bowl into something truly memorable, there are countless ingredients you can add. Whether you use them on their own or mix and match, these toppings and extras will take your noodle game to the next level.

1. Cheese

Melted cheese and noodles are a match made in comfort-food heaven. A sprinkle of grated cheddar stirred in while the noodles are piping hot creates a creamy, savoury sauce.

2. Seafood Sticks

Juicy and lightly sweet, seafood sticks (often known as surimi) bring a taste of the sea. Slice them up and stir them into your broth for a quick, protein-rich boost.

3. Spam

Spam became a beloved staple in many Asian countries after World War II, when American troops introduced it as a convenient source of protein. Over time, it was embraced into local cuisines—appearing in dishes like Korean budae jjigae or Hawaiian spam musubi—so it carries nostalgic and cultural value, unlike in the West where it’s often seen as cheap or low-quality.

Pan-fry cubes or slices of Spam until golden and drop them onto your noodles for a salty, umami hit.

4. Eggs

Versatile and filling, eggs pair perfectly with noodles:

  • Poached in the broth for silky richness

  • Fried and placed on top with crispy edges

  • Boiled, halved, and served ramen-style for extra protein

5. Thin-Sliced Hotpot Beef

If you have hotpot beef in the freezer, swish it through your boiling broth for a quick upgrade. It cooks in seconds and adds melt-in-the-mouth tenderness.

6. Chilli Oil

A drizzle of chilli oil instantly enhances depth and spice. Add more or less depending on your heat tolerance.

We recommend the chilli oil from Lee Kum Kee – it’s delicious but super spicy so add gradually!

7. Laoganma Black Bean Sauce

This iconic Chinese condiment brings a punch of fermented black beans, chilli, and crispy textures. Just a spoonful can transform your noodles.  It also is the perfect accompaniment to rice dishes.  Once you’ve tried it – you’ll use it with everything!

8. Pak Choi

A handful of leafy pak choi balances out the richness. Blanch it briefly in the broth so it stays fresh and vibrant.

9. Tofu

Soft or fried tofu soaks up the broth beautifully. It’s a healthy, protein-packed addition that makes your noodles more substantial.

10. Crumbled Peanuts

For crunch and nutty depth, sprinkle crushed peanuts on top. They pair especially well with sesame or spicy noodle soups.

11. Fish Balls

Bouncy, savoury fish balls are a street-food staple across Asia. Drop them into your broth to simmer — they absorb flavour and make the dish heartier.  Available from Asian supermarkets and online retailers.

12. Kimchi

Fermented, spicy cabbage adds tang, heat, and probiotics. A few spoonfuls instantly give your noodles a Korean twist.

You can make it at home, however it is also available from Asian supermarkets and online retailers.

13. Spring Onions & Fresh Herbs

Don’t underestimate garnishes. Sliced spring onions, coriander, or Thai basil add brightness and aroma that cut through the richness.

14. Shiitake or Enoki Mushrooms

Fresh or rehydrated shiitake (or delicate enoki) add earthy umami and a meaty texture without heavy prep. Toss them into the broth for a flavour boost and a more satisfying mouthfeel.

15. Crispy Fried Garlic or Shallots

A shower of crispy fried garlic or shallots gives instant crunch and aromatic depth — the kind of finishing touch that turns “nice” into “wow.” Use store-bought shallot crisps or quickly fry thinly sliced shallots until golden.

Final Thoughts

Instant noodles are lovely straight from the packet, but with any of these 15 extras you can lift them into a proper meal — creamy, spicy, crunchy, tangy or umami-rich depending on the combo. Try pairing shiitake + pak choi + a soft-poached egg for an umami comfort bowl, or Spam + kimchi + fried garlic for something punchy and indulgent.
